Changes in the physicochemical properties of an emulsion enriched with peach palm epicarp carotenoids: Influence of ultrasound

Abstract

Objective: The objective of the present investigation was to evaluate the effect of ultrasound on the physicochemical properties and carotenoid concentration of an emulsion made with lipid extract of peach palm epicarp. Methodology: Chontaduro epicarp lipid extract was used to obtain an emulsion enriched with carotenoids and the response variables pH, surface color, electrical conductivity, z potential, particle size, and carotenoid concentration were evaluated after ultrasound treatments. Results: Ultrasound significantly increases the concentration of carotenoids (β-carotene, α-carotene, β-cryptoxanthin, zeaxanthin, and lycopene) in the emulsion. The pH, electrical conductivity, zeta potential, and particle size are significantly reduced, while the color parameters L* and C are significantly increased. Conclusions: The ultrasound process increases the concentration of carotenoids, and improves color perception in the evaluated emulsion.
